Collegium Charter School | Commercial Kitchen Design
The Collegium Charter School commercial kitchen design contract included the design, supply and installation of all major foodservice equipment and systems for their new 900 square foot. This commercial kitchen design was developed to provide service capabilities to accommodate a 300 meal service period for their ever increasing student body and faculty.
Major design considerations for this project were having no access to a gas supply for the cooking equipment and limited roof penetration capabilities for exhaust ventilation. Mise Designs specified a multitude of energy saving accessories wherever possible to help offset the additional cost of operating with only electrical power cooking equipment.
Mise Designs worked closely with the foodservice management and operations development team to create this charter school commercial kitchen design around their existing menu offerings with the expectation of utilizing it as a template for all future school expansion plans.
